Introduction:
Enoki mushroom has gained the most popularity in Japan and they lead to popularizing this mushroom. Flammulina velutipes is a little, furry-footed fungus that lives in the wild. Enoki changes as it looks for light and oxygen. The mushroom, which is often grown in cool growing chambers, has very small caps and long stems, which are made possible by raising carbon dioxide levels and reducing light exposure. Enoki can be harvested easily because of their odd shape.

Nutritional value: A 100-gram serving of enoki mushrooms contains
Enoki mushrooms also contain thiamine, riboflavin, niacin, pantothenic acid, vitamin B6, folate, choline, vitamin D, vitamin E, and vitamin K.

ENOKI MUSHROOMS WITH GARLIC & SCALLION SAUCE
RECIPE INSTRUCTIONS:
Temperature:For spawn run 21-240 C
For pinhead formation 4-100C
For fruiting body development 10-160 C
Humidity:Maintain 90-95% moisture level
Substrate moisture level:60-65%
CO2 level: For spawn run > 5000 ppm
For fruiting body development 2000-4000 ppm
Cropping cycle: Two to three crops, 10–12 days apart
Harvest Hints: If culturing in bottles, firmly grasp the cluster and pull. With either method, trim any residual substrate debris off with a knife or a pair of scissors.
Suitable substrate: A wide variety of hardwoods (oak, alder, poplar, cottonwood, aspen, willow, birch, beech, etc.), and some softwoods (Douglas fir) although the latter are, in general, less productive.
The supplemented sawdust formula works well for many varieties of Enoki mushrooms.
Profitability: Room size of 110 sq./m (1000 bottles)
Cost price for one bottle 50/- rupees
Cost per bottle, Raw material 4 Rupees + sterilized packeting spawn etc. – 50 rupees (in bulk)
Total cost of price – 1000 × 50 = 50000/- rupees
Total mushroom production - 1000 (bottles) × 500 gm mushroom = 500 kg
Selling price – 500 kg × 5000 = 2500000 /- (Revenue)
Total profit – 2500000-50000 = 2450000 /- (Profit)
